Healthy Living Recipes : Barilla Pasta Night! Chicken Stir Fry & Veggie Pasta

When I was asked by Barilla to post about one of their new Barilla Better For You Products, I knew immediately I wanted to try their Veggie Penne Pasta. It's made with the puree of tomatoes and carrots which makes it a nice red-orange color, that is very eye catching, and also good for you. When I headed over to Stop & Shop, I was immediately drawn to the pasta aisle, and I kept my eye out for the red pasta in the blue box. I've always loved Barilla products, but I am really happy to be adding these new whole grain and veggie pastas to my pantry. 

This recipe is pretty straight forward, but has a lot of ingredients, so bear with me!

First, you want to cut up and season your chicken. I used three pieces of chicken breast and seasoned them with salt, pepper and soy sauce. 

Cut up all your vegetables and mix them together in a big bowl.  Set this aside for later.

Get a deep medium pan , and use three teaspoons of coconut oil on the bottom of the pan. Once the pan is heated and the oil melts, add the chicken and cover until it starts to brown on both sides. Once this takes place, it's time to add your veggies.


Once your chicken is fully cooked add the vegetables in with half of your soy sauce bottle & two cups of water. I use water to mix with the soy sauce because even the less sodium sauce is a little too salty for me. I feel like the water dilutes it slightly, but also helps cook the vegetables. You're going to cook this for about 25-30 minutes until your chicken and vegetables are tender. 

About 20 minutes in you should start heating up the water for your pasta. Salt the water prior to boiling to add flavor. Bring the water to a boil and then add the two boxes of Barilla Veggie Penne into the pot. Follow the instructions on the box (whether you want Al Dente or regular) the pasta will take approximately 12 minutes to cook. 

Strain your pasta, and once your veggies are done, scoop them on top, and you're all ready to enjoy your chicken stir fry.

  5. I happen to always use Barilla noodles. They are just so good! And this pregnancy I have been craving pastas like crazy. This one looks SO GOOD!
