Healthy Living Recipes : Oatmeal Pancakes


I am a huge pancake lover, but since I have changed my eating habits, I haven't been eating too many pancakes as of late. I wanted to try a recipe that was on the healthier side, but also substituted some ingredients that aren't as good for you. I found a recipe online, but I changed a few things in my own way to make it more personal. Here's my version of oatmeal pancakes!

First, grind your oats in a small grinder or magic bullet. (This should turn the oatmeal into a fine flour).
Add all wet ingredients (almond milk, egg whites, vanilla) in a medium sized mixing bowl and get out your whisk!
Combine wet and dry ingredients. (Additional oats and flour may be needed for consistency).
Pour the batter onto the skillet and cook until the right side up has bubbles all over it.
Flip and cook until golden brown.
Add any topping you'd like, I added almonds , organic syrup and a blueberry.
You can also top with some cinnamon!
