What you'll need : Organic Quinoa, 1 Zucchini , 2 Carrots , Egg , Small Tomato , Small Onion, 3 Cloves of Garlic , Olive Oil , Salt & Pepper

I got inspiration for this recipe from instagram, but kind of put my own twist on it. The original recipe calls for cous cous but I personally love quinoa so I decided to use that as an alternative.
First you want to sautee your garlic, onions, zucchini and carrots in a big pan with a little bit of olive oil. I find that this usually gives quinoa some flavor, and also adds to the texture. Once the sautee s going for about 10 minutes, throw in the quinoa to the mix so it slightly browns. Do this for about two minutes or so. Since 1 cup dry quinoa = 3 cups cooked you want to use about 2 cups of water to cook it. This is when you add your salt & pepper and seasonings (if you prefer).
Once the water is added, bring it to a boil, and then cover your quinoa and simmer for approximately 15 minutes. Once it's finished let it sit for about 5 minutes so it gets even fluffier!
