Healthy Living Recipes : Southwestern Chicken Salad


I am obsessed with any kind of chicken salad lately, and this salad is inspired by the Cheesecake Factory. They have a salad similar to this, and it's my go-to order so I decided to make it at my house, and cut the calories almost in half! Hope you enjoy it!

What you'll need: 
2 Chicken Breasts
Spring Mix Salad
Salt & Pepper
Oregano & Red Pepper Flakes
1 Can Black Beans
1 Can Corn
1 Small Red Onion
Cilantro
1 Clove of Garlic
1-2 Limes
1 Jalapeno Pepper
Olive Oil



First Step: Cook your chicken on the grill, and season with salt, pepper, oregano, and red pepper flakes. You can also brush olive oil on for a little extra flavor.

Once your chicken is all done, wait for it to cool off a bit, and then cut it up into bite size pieces for the salad. Add to the salad once you've cut it up.


Making your bean salad:
Mix beans & corn together in a large bowl. Cut up approximately one clove of garlic into tiny pieces and also add this into the bowl. Next, take salt & pepper and season to taste. Take a little bit of olive oil and drizzle over the bowl for added flavor, and also squeeze 1-2 limes into the bowl right after. Cut one jalapeno, and one small red onion and mix it into the bowl. Lastly, cut up your cilantro and add this to the mixture (I usually like a lot of cilantro so I use half of one batch found in the grocery store).  This makes a pretty big serving so you can save the rest of the bean salad for something later in the week, the longer it sits, the better the flavor!
