Healthy Living Recipes : Cilantro & Garlic Chicken

I am so excited to share a new series with you guys. Every Monday I will be sharing a recipe that I either created or modified from a previous recipe I have used. Since a lot of you showed interest in my "healthy living" talk I wanted to share some of my new favorite meals since I have started this cleaner diet. What you'll need:
4 Chicken Skinless & Boneless Breasts
1/2 Cup Olive Oil
6 Cloves of Garlic 
1/2 Cup Cilantro (Cut)
Salt & Pepper (to taste)
Mixed Vegetables (or whatever side you prefer)
Ziploc Bag
Meat Pounder

To make the marinade: Combine the olive oil, cilantro, and garlic and use a food processor or magic bullet to blend the ingredients together. If it's too thick use a little more olive oil for a better consistency. 

Once the marinade is made, you need to pound the chicken to make it a little thinner. Pound chicken to about 1/2 an inch. Then salt and pepper the chicken on both sides. Put your chicken in a large Ziploc bag and pour the marinade inside. Make sure every piece is evenly coated for the best flavor. Close up the bag and keep cold in the refrigerator for about 3-4 hours.

Next, once your chicken is fully marinated and ready to go, you can either heat up the grill (it was raining this day so I had to make it stove top) or you can make it in a big pan on your stove. Put your grill on medium heat , and allow the chicken to cook about 8 minutes on each side, or until each side is lightly golden brown. 

When the chicken is almost finished, it's time to make your vegetables. I used a mixed bag of veggies that comes with carrots, peas, corn and string beans. You can make any side you'd like but if you're using frozen veggies I usually wait until the chicken is almost done to put them on the stove, so that way they're both done at the same time. Once everything is done, serve and enjoy!
