So I know I said I was going to be changing things up around here, one of those changes being that I will be adding more healthy recipes and some DIY's into the mix. Enjoy this amazing edamame salad recipe straight from my sister. Not only did we have fun making it, but it tastes amazing, and it's great for a healthy snack! Enjoy!
We had a fun little helper during this time, he did more eating than helping though :)
What you'll need (for the salad part):
1.5 cups cooked brown rice (we used white)
1 (10 ounce) frozen package of white corn
1 (16 ounce) package frozen edamame
1/2 cup chopped celery
1/3 cup golden raisins
1/4 cup chopped green onion
1/2 cup julienned fresh basil leaves
Dressing:
3 TBSP seasoned rice vinegar
5 TBSP expeller pressed canola oil
1 TBSP lemon juice (freshly squeezed)
1/2 tsp ground pepper (fresh)
1/2 tsp salt
Optional: 1/3 cup sliced almonds
Next: Combine rice, corn, edamame, celery, raisins, onions and basil in a large bowl.
Make the dressing in a small bowl and whisk together dressing ingredients.
Pour dressing over salad and toss with a spoon so everything gets coated.
And enjoy!
